Funfetti Cookie Bar and Nestle Tollhouse Partnership

Happy Monday! Did you guys see on instagram my latest big announcement? In case you didn’t, I am partnering with Nestle Tollhouse for three months, showing you how I use their chocolate morsels in my baking! Here’s how it works: they send me free morsels, I bake with them, you enjoy the pictures and recipes! Yay!

This first month they sent me four bags of morsels. I was MOST excited to see the new unicorn morsels in the bunch, which was a partnership between Nestle and Christina Tosi. If you’ve seen my other instagram posts, you’ll know I am a big Christina Tosi fan. What better way to use the unicorn morsels than with a funfetti cookie bar dessert?

A few notes about my funfetti cookie bar recipe:

The base of this funfetti cookie bar is a plain, sugar cookie dough. All the fun is in the mix-ins. So go crazy. I just did sprinkles and unicorn morsels, which are vanilla flavored. But, I think it would taste even better with more flavors of chocolate morsels, maybe some chopped nuts, or marshmallows too. I don’t know why I didn’t think of it then. I was just too excited about the unicorn morsels.

You’ll also see the recipe calls for regular granulated sugar and brown sugar. The reason for this is that I literally ran out of regular sugar when I was making this. Oops. It still turned out tasty and not overly sweet. Jeremy and I really liked it, but if you’ve got a sweet tooth, then substitute regular white sugar for the brown. Oh, and the corn syrup in the ingredients is optional. I added it in because I use it when I make my Milk Bar cookies and feel that it helps with the texture of the batter, but feel free to leave it out.

One last note: this recipe makes a 9×13″ pan of cookie bars, which is great to feed a party. If don’t need so many servings, feel free to cut the recipe in half and bake it in an 8×8″ square pan, but KEEP THE ONE EGG YOLK IN THE RECIPE. It makes your cookie bars dense and chewy. If you are super into chewy cookies, you can even add an extra egg yolk to the full 9×13″ pan recipe.

Funfetti Cookie Bars with Unicorn Morsels

These funfetti cookie bars are easy to make and full of rainbow unicorn fun. The full recipe will easily feed a crowd, but feel free to halve the ingredients to bake in an 8×8" pan (keep the one egg yolk, though!).

Ingredients

  • 1 cup butter (two sticks)
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 1 tbsp corn syrup OPTIONAL
  • 1 tbsp vanilla
  • 2 eggs + one yolk
  • 3 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 3/4 tsp salt
  • 1 tbsp corn starch
  • 1/2 cup sprinkles plus more for topping
  • 1/2 cup unicorn morsels plus more for topping

Instructions

  • Preheat oven to 350 degrees F and grease a 9×13" baking pan.
  • Cream room temperature butter and both types of sugar together until the color has become very pale, the texture is soft and fluffy, and the volume has almost doubled in size.
  • Add in corn syrup and vanilla and mix to combine.
  • Add in the eggs and yolk and mix again until mixture is homogeneous.
  • In a separate bowl, whisk flour, baking powder, baking soda, salt, and corn starch.
  • Add dry ingredients to wet ingredients and mix until just combined.
  • Add in sprinkles, morsels, and any other mix-ins and mix until combined.
  • Press the dough into the 9×13" pan and flatten with your hand. Sprinkle more sprinkles and morsels on top for decoration.
  • Bake at 350 degrees for about 30-35 minutes. Don't let the top become too brown otherwise it'll lose its chewiness.
  • Cool completely and cut into squares or rectangles to serve.

Full confession: I originally set out to make ice cream sandwiches, but I went too overboard with the cookie bars. They ended up too thick for sandwich slices! In the pictures I served these funfetti cookie bars with some homemade rose ice cream instead. I kind of winged the rose ice cream recipe so it’s not ready to share (yet), but serving the cookies with a fun ice cream is highly recommended.
