Perfect Matcha Rice Krispies Treats

2023: Matcha rice krispies treats is one of the very first desserts I posted when I started this blog, so I thought it was time for an update! Since I first wrote this recipe, I have managed to test many different blends of matcha. I feel like I have truly fine tuned my matcha selection for different desserts, so I hope you enjoy this updated version!

What Matcha Should I Use for Desserts?

Just like with coffee, matcha has different blends with different flavor profiles. Some are very strong and bitter. Some are lighter in flavor but stronger in sweetness. In the end, the amount of matcha to add to desserts will depend on what blend you are using.

For desserts that get baked with many other ingredients, like cakes and cookies, I like to use a very strong and bitter blend. That way the flavor still pulls through.

For rice krispies treats, though, you’re not cooking the matcha, and you don’t actually have many competing flavors. So for this recipe, I really recommend going with a very high quality match that has a strong flavor but a lot less bitterness. The blend I used when testing this recipe was Ippodo Tea’s Sayaka blend, which is available on their website or on Amazon. This is also the blend I use for drinking unsweetened lattes!

How to Add Matcha to Rice Krispies Treats

I found that using 1 tsp of Sayaka matcha per every 3 cups of rice cereal was the perfect amount of matcha for me. You taste the matcha flavor but no bitterness. The green is SUPER bright and vibrant, even after a few days with no extra food dye needed. I highly highly highly recommend using this blend or something of similar quality for this recipe.

Tips for the Best Matcha Rice Krispies Treats

The base recipe for these matcha rice krispies is still a basic rice krispies treat recipe. It’s so easy, and there really isn’t much to say about it.

HOWEVER.

There are some tricks you can use to keep your rice krispies treats soft, even as leftovers.

Number one: Don’t let your marshmallows bubble and boil. Marshmallows are made of sugar, and when sugar gets cooked at high heat it hardens up.

Number two: Add a little sweetened condensed milk. This is optional and does not really affect the flavor at all. But I have found that adding just a little condensed milk keeps the marshmallows softer even as it cools.

And last tip about adding matcha to rice krispies: I find it best to sift the matcha into the melted marshmallows to prevent clumping.

How to Get Thick Rice Krispies Treats

This recipe uses 6 cups of rice cereal for a 9×13″ pan, which results in squares that are about 3/4″ thick. I think this is the perfect size for sharing at parties. Or you can halve the recipe and put it in an 8×8″ pan with about the same resulting thickness.

If you want super thick treats, like the kind you see on Instagram, do a full 6 cup recipe in an 8×8″ pan. It’s… honestly a little too much for me, but it makes a good picture.

Perfect Matcha Rice Krispies Treats

These easy matcha rice krispies treats have the perfect matcha flavor. The green color stays bright even days later!

Ingredients

  • 1/2 cup unsalted butter 1 stick
  • 1/2 tsp kosher salt
  • 1 10 oz bag mini marshmallows
  • 1/3 cup sweetened condensed milk optional
  • 2 tsp high quality matcha
  • 6 cups Rice Krispies cereal

Instructions

  • In a large stockpot or very large skillet with deep sides, melt butter and add salt.
  • When butter is melted, add marshmallows and condensed milk. Keep heat on low-medium and stir until marshmallows have melted. Don't let it bubble!
  • When marshmallows are mostly melted, sift matcha on top. Stir until the green color is evenly dispersed.
  • Turn off the heat and add the cereal. Stir gently to combine.
  • Pour Rice Krispies into a greased and lined 9×13" pan. Flatten and press down gently with a spatula. For very thick Rice Krispies you can use an 8×8" pan instead.
  • Cover and let cool down at room temperature for at least 30 minutes before slicing into squares or rectangles for serving. Leftovers keep in an airtight container at room temperature for several days.

  • I recommend using a high quality matcha that’s not too bitter, such as Ippodo Tea’s Sayaka blend.
