Do you guys remember seeing my rice cooker lap cheong recipe? Well, I’m back with another rice cooker meal. This time it’s chicken and rice. Dump two pieces of chicken in with your rice and some aromatics, push the button, and your lunch is ready in 20-30 minutes.
My mom and grandma make rice in the rice cooker quite frequently, but they like to use the steamer rack above the rice. This works too, but I find that the chicken can get dried out. I prefer to dump the chicken directly into the water. It flavors the rice AND the chicken stays juicy. Just remember to generously season with salt, pepper, and ginger. Flavors will be reminiscent of Hainan chicken and rice! Yum!

Hey…
For some reason, I haven’t been receiving emails-blogs from you.
Did NOT receive this recipe’s (Sept. 8th) email.
The only one recently was this one (Air Fryer Mochiko Chicken & Easy Snow Skin Mooncakes) dated Oct. 2nd.
Gonna definitely try this (RICE COOKER GINGER CHICKEN AND RICE).
Hey Doug! I don’t have my newsletters set for every single post. I typically send out monthly newsletters with a roundup of highlighted posts from the previous month. Good to know that you are looking for more frequent notifications. I may eventually provide options for different levels of subscriptions. I do hope you give this recipe a try – it’s one of those I use when I need something easy and mess-free, although it’s not my most “gourmet” dish. Let me know how it goes.
Can I use salmon instead of chicken?
Please do more one pot rice cooker recipes! My dad used to make these too and I’ve seen other blogs where they go through the hassle of frying the chicken first, blah blah blah. Some people just don’t have the time! He used to add cabbage, lap cheong and chicken all in the pot 😀
I will try your recipe soon, with the addition of cabbage!
Ah, thanks for the feedback! Honestly, I’ve really been wanting to do more rice cooker recipes, but I need to get a new rice cooker XD. I’ve got a 3 cup one, but now I’ve got 4 mouths to feed in my family. I need to upgrade! Lately, I’ve been doing more “side” rice dishes – like adding edamame or shoyu corn to the rice when it’s done, but I guess that’s not technically a one-pot recipe since I serve it with other dishes. Maybe I’ll start adding them to the blog, though, if those kinds of things are in demand!
