Strawberry Matcha Latte

Inspired by the famous Boba Guys drink, this strawberry matcha latte uses minimal sugar. Sub coconut or almond milk to keep it vegan.

Ingredients

  • 1 cup chopped fresh or frozen strawberries
  • 2.5 tbsp sugar
  • 1 tbsp matcha
  • 1/2 cup hot water
  • 1.5 cups milk of choice
  • ice

Instructions

  • Put strawberries and 1 tbsp of the sugar in a small saucepan. Heat over medium high heat, stirring occasionally, until strawberries have softened and a syrup has formed. Mash any remaining large strawberry chunks with a fork.
  • Meanwhile, heat water on stovetop until boiling (or just about to boil). Whisk matcha and remaining 1.5 tbsp sugar. Then whisk in hot water until no lumps remain.
  • Divide the strawberry syrup between two glasses. Add ice cubes on top.
  • Pour about 3/4 cup milk into each glass, depending on how many ice cubes you have.
  • Divide the dissolved matcha in two portions and pour over the milk in each glass.
  • Stir to mix before drinking.
