Servings: 2 12 oz mugs
- 1 large Okinawan or Molokai sweet potato
- 1 tbsp honey or sugar
- 2 cups milk of choice
Make mashed sweet potato: poke holes in your sweet potato with a fork and microwave for 5-6 minutes or until it can be easily pierced. Peel the skin and scoop out the flesh into a blender. You should have about 1 cup of cooked sweet potato.
Add honey and milk to the blender and blend until no lumps of sweet potato remain.
Pour blended sweet potato milk into a pot and heat on stovetop until warm. Transfer to two mugs and enjoy. Alternatively, you can pour blended sweet potato milk into a microwave safe mug and microwave until warm. Optional: pour heated latte back into the blender to make frothy before serving in mugs.
- Either Okinawan or Molokai variety sweet potatoes work for this recipe.
- If you don't want to microwave, you can cook your sweet potatoes in whatever way you'd normally use (e.g. baking in the oven, grilling, etc.).
