Rice Cooker Ginger Chicken and Rice
The easiest, one-pot, small serving meal: Cook your chicken with your rice in your rice cooker!
Servings: 2 people
- 2 small, skinless, boneless chicken breasts or thighs
- 1 tbsp ginger, peeled and sliced
- 2 cloves garlic
- 2 scallions, chopped
- 1 cup uncooked jasmine rice
- water for cooking rice
- salt and pepper to taste
Generously season your chicken breast with salt and pepper.
To your rice cooker, add jasmine rice and water according to your rice cooker instructions.
Place chicken breast, scallions, garlic, and ginger directly on top of the rice. Do not stir.
Turn your rice cooker on and cook according to your appliance instructions (for me, this means putting the lid on and pushing a button).
When your rice cooker is done, your meal is ready!
