Rice Cooker Ginger Chicken and Rice

Do you guys remember seeing my rice cooker lap cheong recipe? Well, I’m back with another rice cooker meal. This time it’s chicken and rice. Dump two pieces of chicken in with your rice and some aromatics, push the button, and your lunch is ready in 20-30 minutes.

My mom and grandma make rice in the rice cooker quite frequently, but they like to use the steamer rack above the rice. This works too, but I find that the chicken can get dried out. I prefer to dump the chicken directly into the water. It flavors the rice AND the chicken stays juicy. Just remember to generously season with salt, pepper, and ginger. Flavors will be reminiscent of Hainan chicken and rice! Yum!

Rice Cooker Ginger Chicken and Rice

The easiest, one-pot, small serving meal: Cook your chicken with your rice in your rice cooker!
Cook Time 30 minutes
Servings 2 people

Equipment

  • Rice cooker

Ingredients

  • 2 small, skinless, boneless chicken breasts or thighs
  • 1 tbsp ginger, peeled and sliced
  • 2 cloves garlic
  • 2 scallions, chopped
  • 1 cup uncooked jasmine rice
  • water for cooking rice
  • salt and pepper to taste

Instructions

  • Generously season your chicken breast with salt and pepper.
  • To your rice cooker, add jasmine rice and water according to your rice cooker instructions.
  • Place chicken breast, scallions, garlic, and ginger directly on top of the rice. Do not stir.
  • Turn your rice cooker on and cook according to your appliance instructions (for me, this means putting the lid on and pushing a button).
  • When your rice cooker is done, your meal is ready!
