These apple fritters use the same brioche dough as my kinako donuts and are a great way to use up leftover dough. It’s a little less fussy to make, as you don’t need to cut out circles of dough or do any filling. Grinding some toasted sesame seeds and sprinkling it on top with powdered sugar gives it a nutty flavor to balance out the sweetness. A sweet tahini dipping sauce would go really well with this, but I’ve been too lazy to make one. Maybe you can make one for me and let me know how it goes.
Ingredients
- 1/4 batch of Bread in 5 brioche dough
- 1 apple, diced
- Oil for deep frying
- 3 tbsp toasted sesame seeds
- powdered sugar for dusting (about 1/4 cup)
Instructions
- Roll out the dough (doesn’t matter how thick at this point), using flour to keep from sticking
- Dump diced apples in the middle of the dough and lightly knead to incorporate
- Roll out dough again to about 1/2 inch thick as best as you can
- Let rise about 30 minutes (if your kitchen is very cold you may need to let the dough rise longer)
- Meanwhile, heat about 3 inches of vegetable oil in a pot to 350 degrees F.
- When ready to fry, tear off 2 inch chunks of your apple brioche dough and fry 3-4 at a time for about 1-2 minutes on each side.
- Let cool on plate lined with paper towel.
- Grind sesame seeds with mortar and pestle or blend with powdered sugar in food processor.
- Sift sesame seed powder and powdered sugar mix over apple fritters.
Recipe Notes
- If your chunks of dough are too big when you put them in the fryer, they may not cook in the center before the outside burns. Check your first batch of fritters by cutting them open and adjust the size of your dough chunks accordingly.
- You can usually find toasted sesame seeds in the Asian or spice section of grocery stores or at an Asian market. If all else fails, Amazon.
